I'm having trouble baking my cakes (I'm new at this). Although I follow the instructions, my cakes get overcooked on the outside while they are still uncooked in the center. Any recommendations? Thanks

Welcome Rosa, I'm no expert but it sounds like your oven temperature is off. Check out the self taught decorators club in this site. I'll give you the link here. They have been discussing a topic very similar right now. They also have some great tips concerning using a flower nail in the center of your cakes to make sure they get baked in the center. It sounds like your temperature in your oven is off. It might need calibrating. You should always check your oven when baking on a regular basis. Find a good oven thermometer to verify the temperature of your oven. I just calibrated mine this week. I was off 25 degrees. These past two weeks we noticed our roasting meats, pork and chicken including some baking were not cooking correctly. Now, we are fine. Just did three pies! Perfect. Good luck. All OVEN no matter how wonderful they are do get out of whack. It is normal. Even when you first get your oven, the directions indicate to calibrate your oven.

Actually I was going to give you the same advice as Stampinsher. My very 1st oven, yikes, I was newly married, and everything burned. Thats when I called the repair man & found out my oven was 50 degress hotter than the temp I set. Ever since then, I have a oven thermometer I occasionally place inside the oven to check. They most definetly do get out of whack.

as the others said, the oven is a good 1st place to begin. also, dark pans need a lower temp. pans 10" or larger need a temp 25°F lower than smaller cakes with extended time. Definitely use a metal flower nail or baking core in the center of round or square cakes 10" or larger, 2 nails evenly placed in large rectangular and shaped pans. prep your pan. sprat your flower nail or baking core with pam/cake release and place in pan. pour the batter into the pan around it. bake away! don't open your oven to check the cake till you smell the cake baking. if your center isnt quite done but it's browning too much you can cover it with foil till it's done. finally, check your amount of liquid in your recipe. if you are adding additional/too much liquid or sometimes liquid with added sugar (juices, sodas, jams), it can change the chemistry of the mix. either reduce the liquid or add flour to compensate. let us know how the next one turns out! good luck!

your oven manual/instruction book should tell you how to calibrate your oven temperature. If not, then you may have to bring in a service man to do it for you.

For my oven to calibrate all you do is take off the oven temp. knob and on the back are a couple of little screws. You loosen them and adjust it a little to make it work at the correct temp. What you need is a separate oven thermometer and determine if the oven is high or low and by how much. Then you pop the knob off and adjust it to make the knob set cooler or hotter. All you are really doing is adjusting the knob, not changing the oven temp. Do that a couple of times, rechecking with the thermometer so the knob matches the actual oven temp.
