I would make all accents out of fondant unless they need to stand up. I made a Fabulous Forty Vegas cake and wanted to put cards on it but run out of time.
One great one, but the little center pieces were not edible, I had it at my own poker party though, so it was easy to remove the pieces before I cut the cake.

Those are some great cakes! I've done a few poker cakes, some with fondant accents and some with gumpaste. Alene is right, if everything will be laying flat on the cake then I would stick with fondant but if you want to "feather" the cards or have them overlaping eachother then you might want to go with gumpaste do they don't droop. Hope that made sense! Good luck - poker cakes are fund :)
how about a round cake look like a giant poker chip then add playing cards out of fondant on top with money made from gum paste on wire to make it look like some one has won as a center piece on top.
