This is Serious Cakes'  Buttercream Recipe... This is the one I use.  Everyone loves the taste of it and it crusts nicely.

Buttercream Frosting

Ingredients
22 tbs salted butter, softened (about 3 sticks)
2/3 c. shortening
5-8 tbs heavy cream
2 tsp clear vanilla
2 lbs powdered sugar (about 8 cups)
1-3 tbs corn syrup

Instructions
Cream together butter and shortening until smooth. Slowly add 2 tsp. vanilla and 5 tbs. heavy cream. Gradually add the powdered sugar and scrape down the bowl very well once it’s all added. Slowly add more cream and corn syrup a tbs at a time until frosting reaches desired consistency.

Does this buttercream "smooth" I'm trying to find the perfect buttercream to smooth vs fondant. I love the way fondant looks but not a fan of the taste (prefer buttercream)

It does smooth rather well.  I have found the longer you mix it at the slowest speed on your Kitchen Aid the smoother it gets.  Also, it's a crusting buttercream so you can use a Viva paper towel or parchment paper to smooth it after it crusts.

hi i had never heard of rolled butter cream is this used like fondant? and what is the differance between the 2 ie good and bad points

Yes Dawn similar in that you can "roll out" the buttercream like it was fondant. I have tried it, and personally, it is WAY too sweet for my taste. But you might like it. You will have to try it for yourself.

I also just posted my red velvet cake recipe for you as well.

Where is the Red Velvet...I've clicked around and now I'm dizzy!

Look at discussion "Wedding Cake Advice".  It is posted there Cat. Anytime you want to find something, in the top right hand corner of this site, by your name it says..."Search Cake Decorating Site".  Just type  in your question.

Oh by the way Cat. I guess you know your page is set to "private". This means no one can see any of your cake photos. Sure would like to see them.

Here is a link to a tutorial on SMBC. She did an excellent job in explaining SMBC . And to my knowledge she does use this under fondant, because she dosen't use any other BC. So you have to check her tutorial.

Well Swiss buttercream can not be used under fondant and I just wanted to be sure. Also read that this buttercream sometimes melts a bit. So if anyone has used this under fondant would you please let me know? I soooo appreciate it. Don't want to have a disaster on my hands..... well that can still happen just because! lol
