Throwing out a a question here. My nephew us getting married next May. It is un a rural setting. Chapel & reception all in one place. They are having a gourmet bb-q caterer. They do not provide wedding cake. They have asked me to make a small wedding cake to cut as they want to ( bride does ), make cupcakes. 190 to be invited. They asked my opinion, re: the cupcakes. Problem is there is no refrigeration at this venue. I said it would be extremely risky. Once they leave the city for the wedding/reception, they would ( or someone) have to bring the cupcakes with them. No storage, no fridge??? It could be a cool May, or stinking hot, can't predict the weather. My only suggestion to them would be, keep the cupcakes frozen, iced, transport in coolers with ice. If they were set up right after the ceremony, they would thaw and be fresh. I did tell the bride that even under the best circumstances, cupcakes are hard to transport. Did 200 for a friends wedding, man, what a nightmare. Since I am a hobby baker, didn't have a van/truck. It was August, icing was melting!! Agggg!! Thank goodness the hall had a walk-in fridge!. I fixed the cupcakes, set up the table and staff put them out just before B & G/guests came.
Hope this bride re- considers. Feeling she might. Just baking 200 in your own kitchen & finding enough room to freeze them, let me tell you, it ain't easy.
Thoughts on this???

The concensus here is that we would freeze them already topped and then pack them in boxes with cupcake inserts, and then pack them boxed in coolers packed in dry ice.  We're pretty sure that they would still be cold by the time someone was eating them even in the summer.

june   i dont know if u have a walmart..,.but they have these containers also.i have bought serveral to deliver cakes..there r several sizes.

 

HIGH HUMIDITY ICING THAT WORKES VERY WELL FOR ME IN SUMMER SOUTH GEORGIA.......                                  1/2 cup solid vegetable shortening

1/2 cup butter

1 teaspoon clear vanilla

4 cups sifted confectioners sugar

2 tablespoon milk

2 tablespoon cornstarch

  beat shortening and butter till light and fluffy...add vanilla and mix well..gradually add sugar..beat well on medium speed..icing will appear dry..in small bowl mix milk and cornstarch..stir till dissolved and add to icing mixture slowly  .after mix well beat at medium speed till light and fluffy.

 

keep this icing covered with damp cloth till ready..for best results keep icing  in refrigerator when not in use(in air tight container) can be stored up to 2 weeks.rewhip before using

And yes, the bride could change her mind 10 X's by then.
it doesn't take that long to ice 190 cupcakes unless you are doing something fancy on each one.  If you keep the icing cool in a cooler (not COLD) in bags or just in some tupperware containers or buckets, you can frost them when you get there.  just my opinion. 
Yeah that's kinda what I was thinking too... it sounds like she's not going to be there to actually do it herself?

June, the containers I bought are available at WalMart, too.  They even have the longer under-the-bed boxes.  Good luck with this...I know you have almost a whole year to think about it...keeping my fingers crossed so the bride changes her mind to make things easier on you. :)

I have these carriers   http://www.amazon.com/Cupcake-Courier-Caddy-Cupcakes-Translucent/dp...  I picked mine up at Costco for around $18 each.  They are wonderful and I transport cupcakes all the time in them.  I have baked them up to 3 days in advance and store in these containers and they have stayed fresh as fresh can be!  I usually ice them at the latest possible minute so the icing is fresh.  If you had the carriers you could put the buttercream on them on site as you put them on the display.  Weather is tricky... good luck!
