Cake Decorating Community - Cakes We Bake

I have 3 cakes due by this weekend & 1 of them is a sculpted helicopter, that is the hardest of the 3. My question is can I sculpt the helicopter cake & dirty ice it now(tuesday) & freeze it till thursday afternoon & then cover it? It will be covered in fondant. Would it be better to thaw complety before covering in fondant or is it okay to cover frozen/partially frozen. I'm not sure how the cake & buttercream together will do. I know you can store buttercream in the freezer.

Jennifer - I've fondanted a frozen cake before and it was fine. I will usually put my buttercream cakes in the freezer for 15-20 minutes before I put fondant on them anyway.
I can't really say one method is better than the other, both works great. Best thing to say in this case is its your preference.
In my profile is a picture of a toolbox cake I made in February. That cake was frozen then covered with fondant and it sunk! Thank goodness the worst was in the back (and I did it for friends). On the top of the cake you will see I have tools and a happy 75th birthday card covering the support posts that were poking out of the top after it sunk. I actually put the support posts an 1.5" into the cake. I was not happy! =(

That was my first experience with a covering a frozen cake with fondant. I am sure a did a million things wrong...so listen to the pro's.
