So, I made my first cake from scratch last night. I used the Cake Boss recipe I found here. I was excited to use my new Kitchen Aid Pro mixer. I followed the recipe, but it came out like lead. The flavor was ok, but it was pretty dense. I am not sure what I did wrong.
I did use a 10in round pan, instead of 2 8in round. I didn't think that would matter, as long as I kept an eye on it. The recipe also called for using a paddle attachment. I don't know what that is. My mixer has a flat beater. Is that the same thing? Any help would be great. Thanks.
Also, the recipe didn't specify what speeds to use when mixing.

I want to be able to make a cake that is easy to carve. Until now, I have been using box mix. It has worked fine overall. Just a little too crumbly, even when frozen first. Thanks for your help.
Ken - the paddle attachment is the one that usually comes standard with KitchenAid - it's the one that looks like a misshapen peace sign. :)
Have you tried the WASC recipes on here? They are nice and dense and easy to carve after being frozen. You can also a doctor a cake mix as follows for a more dense poundcake-like cake:
1 cake mix
1 4-serving size pudding in complimentary flavor to cake mix
4 eggs
1 cup water
1/3 cup oil
Mix all ingredients on low for 30 seconds. Turn up mixer to medium and beat for additional 2 minutes. (I usually set my microwave timer so I make sure to beat it just the right amount). Pour into pans and bake according to pan directions.

I have several recipes on my blog on here that I use all the time with much success... they are all doctored mixes using sour cream. I never freeze them but you can if you want. They are all very moist and turn out yummy. Best of luck! And keep trying!
