does anyone know what recipe buddy from cakeboss uses for his bttercream it looks so smooth. also do  fill a cake with crusting buttercream or is that a different kind?

I use the same buttercream inside and out on my cakes.  It doesn't crust when it's inside the cake - it stays nice and creamy because it's not exposed to the air.  Buddy's buttercream recipe is in his new book.  I'm not sure of the liability issues of reprinting it here. :( 

I saw Buddy's new book at my Barnes and Noble - great stories in it.  I'm sure you could go to your local book store and see it too.  He shares some of his recipes as well.  From my memory of seeing his book several weeks ago, I believe I'm correct but I could be incorrect (not likely) his buttercream is all butter!  It must be refrigerated and stay refrigerated until you eat it and then if there is any leftover it must be refrigerated.   It is stressed to be refrigerated because all butter.  

I hope that gives you a really good idea on his recipe.  Heck, just go to B&N and look for yourself.  Again, there are some really nice stories about his family in there.
