Cake Decorating Community - Cakes We Bake

Hello!

I have a request for a 3 tier cake, one tier with Irish Cream filling, one with almond filling, and one with Kahlua filling. Here's my question:

Can I just use the liquors as the liquid in my standard buttercream recipe to get the flavor? Or will the alcohol mess with the texture?

Any help appreciated!

Eileen I found this recipe,

Irish Cream Cake Filling - Frosting Recipe
Irish Cream Cake Filling 3-1/2 oz pkg vanilla pudding mix 1-1/2 cup whipping cream 2 tbsp Irish Creme liqueur Combine Vanilla pudding mix and whipping cream until smooth, gradually add the Irish Creme liqueur. A great filling for layered cake.

I've used liquers in cream but never in buttercream so I don't know what will happen.
If i use an Irish cream filling for my layered cake does it have to be refrigerated?
Eddie - the filling I ended up using was just my standard buttercream recipe replacing the milk with Bailey's.  I do refrigerate my cakes always for my own food safety peace of mind.  Yes, I refrigerate fondanted cakes (with no issues I might add!).    My rule of thumb is that if it has dairy products in it, it should be refrigerated.  But that's just me - a lot of people will tell you they leave theirs on the counter with no issues.  I did once leave a cake covered with chocolate cream cheese frosting on a counter overnight and had some the next day as a personal experiment. No illness.  But I always think it's better to play it safe than sorry.
Ok with that said what would you recommend as a good cake filling that i could possibly tint green that could sit out on the counter? It's for a bake-off at my job and the fridge isnt big enough to hold the cake that I'm gonna make.
Good question.  I hope someone else can help you.  I'm afraid I'm useless on this one.  All I can think of is lemon (like the lemon pie filling you buy in the store) - you could add just a touch of blue to it and it would turn green.
Ok, thanks.
I am making an irish creme white chocolate ganache this weekend... is a new experiment.  Am using white chocolate ganache and adding silver cloud irish creme flavor.... not sure how it is going to come out but have a request for it so I'm going to give it a shot!
