Hi Ladies so I got my first wedding cake order for ;une and I am nervous as can be lol..I can't believe cake has me nervous I'm just posting this because I'm looking for any type of advice I'm really nervous lol..my bride I'm going to do a sample cake for but I'm nervous about using buttercream ohh I hate doing buttercream cakes I truly do I'm a lefty and I really find it kind of hard for me to do certain flowers in buttercream but I can do fondant or gumpaste flowers like a semi-pro well ladies is there any advice you have for me I'm open to all options and I need advice in all areas I'm a rookie in this field lol !

Just be sure you are well prepared and Iam sure it will go just fine.  Since I started using fondant I hardly ever do all buttercream anymore either... I share your fear!!!   Do you have a good bench scraper and turntable?  Those are two great tools for buttercream!  Good luck and can't wait to see the cake!!! Have you tried Serious Cakes buttercream?  Or Sharon Zambito's buttercream?  They both have good recipes! 

 

Invest in some sponge rollers (from the hardware store) as I use that method to

smooth my buttercream.  Think it is called the Melvira method..  works like a dream

If I were you, bake your cakes a week ahead of time and wrap thoroughly and pop them

into the freezer...that way it won't be too much of a rush when the time comes.

Shay, if your BTB is resistant to gumpaste or fondant flowers, there are a lot of places ( both web and brick/morter) that sell RI flowers.

They look exactly like B/C, just a bit crisper, lol.

And thank you ladies so much all the info I find very helpful and I'm going to try each idea because I'm going to need ;o) I'm going to make two sample cakes so one buttercream and one with fondant but I am defitnetly using serious cakes buttercream recipe I love the texture of it...uggghhhh I'm so nervous I guess because I'm a rookie in baking but I am also delighted the bride knowing I'm a rookie is giving me this chance so I'm going to go out buy every bridal cake book there is in the world and get the baking lol...thank you so much ladies I'm truly thankful...
Can't really give you any tips coz 1. i'm new too, 2. i have no wedding cakes experience lol 3. i'd be nervous about it too but I can give you some moral support? Goodluck Shay! I'm sure you'll be fine!
