Cake Decorating Community - Cakes We Bake

hi ,new to cake baking and have been trying to perfect a mud cake in a 30cm round tin but always comes out to dry!  somebody told me can only make cakes upto 22cm tin, but that sounds wrong cause how then can the bakeries do larger moist cakes?

any ideas,please

WASC recipe for me stays moist in any size. give it a try!
i'm seeing WASC alot on this site.What is it,acake mix of somesort.??
i'm in sydney and i don"t think we have a big a range of products as you guys in usa
I always make my cakes ahead of time and brush a simple syrup on before freezing them. You might try this on the cake to see if it helps.
In a couple other threads are the recipes for the WASC... I will copy and paste the versions I use for you. I never freeze my cakes.. just don't like them frozen and thawed but it is my preferance...no right or wrong just what I do.
This is the recipe I have come up with trial and error... tweeked here and there and this is my version of the Chocolate WASC that I will swear by!

2 boxes of Betty Crocker Triple Chocolate Fudge
2 cups flour
2 cups sugar
1 1/2 tsp salt
3 TBSP Cocoa Powder
1 TBSP Espresso Powder ( I use Medadlia D'Oro brand)
I put all of the above into my 6 qt kitchen aid and start it on low and let it run to incorporate all the dry ing well.
While that is running I measure out the following:
2 2/3 cups water
1/2 cup oil
6 whole eggs
Add the water let it mix in, add the oil let it mix in, add the eggs 3 at at time and let them mix between additions
Then add in
1 TBSP Madagascar Vanilla ( I use my own homemade)
2 Cups Sour Cream add 1 cup at a time
1/2 bag of the Nestle mini chocolate chips

i might give this WASC cake a try in the next couple of weeks ...my family will kill me if i force another rich cake on them to taste test as i'm just finishing off my last day of a short cake course.tomorrow tirumisu..
