Cake Decorating Community - Cakes We Bake

I'm not by any means a professional here, but I do love to do cakes! I've promised a baby shower cake and cupcakes for a dear family friend. I work full time outside the home. How much time should I set aside for the cake and cupcakes? The cake will be 11" x 15" and I'm thinking a couple dozen cupcakes. It will be semi simple cake design. I'm using a picture from Fisher Prices Rain forest theme to be put on the cake along with a palm tree and a leaf motif all around the background. The cupcakes will be iced simply to coordinate with the cake colors. I don't want to make everything to far in advanced, but I also don't want to be in a hurry and not finish in time. Any and all suggestions will be greatly appreciated. Happy New Year everyone!

Hi Maureen, I think it really all depends what you are making your decorations out of. If it's all buttercream, there's not much you can do in advance. But, if you are making your designs from gumpaste, you can do that in advance. The nice thing about doing the decorations in advance is that it speeds up the process of assembling the cake on the day you are decorating it. I know it's very tough when you're working. You can make the cake in advance, freeze it, then let it thaw while still wrapped overnight the day before you want to decorate it. There's nothing like being up until 3 in the morning with a complete disaster to clean up!! Been there. Also, if you make runout designs, those can be done in advance and placed on the cake quickly.
Ok, like I said I'm not a professional; so therefore please explain how to properly wrap? I would certainly not want to deliver cakes that have freezer burn or end up mushy. I will say that all the pre-planning that goes into a cake makes me admire all the professionals that much more!

I think that it's all going to be done in butter cream but part of me is thinking about doing the tiger and palm tree out of royal icing then just place them on top and have a lot less work when the time comes. Any thoughts on this?

Maureen, I'm going to write up how to do a runout design in the section of the forum for cake decorating techniques so that it will be easy to find if someone else wants to learn.
