I'm making a birthday cake for my grandbaby for Saturday (4 days from now) and it has a lot of elements in it. Usually I make cakes within a day or 2 of serving them, but I'd like to get a headstart on this one. Can I freeze a fondant-covered cake? I did it once and the cake went through a real gooey phase as it thawed, and had an unpleasant sheen on it, but maybe this was due to extreme humidity in the air (I won't have that problem this weekend).
Also, how long can I store a fondant-covered cake in the fridge?
Any advice will be gratefully appreciated!

I would not freeze a fondant covered cake. When I am doing large wedding cakes I bake 3 days in advance. The fondant holds in the moisture and it works a a barrier to keep the cake from drying out. Just keep it in a very cool room. I always make all the details up to a couple weeks in advance that way it makes the day of the cake fun!
