Cake Decorating Community - Cakes We Bake

A couple of weeks ago my doctor said I have diabetes, and has me on a no carb diet.  He is hoping that with the diet I wont need medicine.  I am trying so hard to do this.  I am doing really good, and never reach the aloted 60g of carbs I can have.  But it was so hard not to have a piece of my daughters birthday cake, or one of the 4 doz cupcakes I baked, I love the cake part..... I want to make pumpkin cake, bread and cookie, from the club page, but I can't eat any of it.

 

I love baking, and decorating, and really want to learn more.  This is so hard, because I want to lick the spoon when I am done mixing my batter..... I hate to think about never being able to eat a piece of cake again.

 

I am sure there are things I can do for treats for myself, but the no carb thing is hard when most cake is made with flour and sugar.  Is there a subsitute for flour?? I know splenda is used for baking and there are other things to use.  I would never do it for other peoples cake I make, just something for me..... And a few of the poeple in my family who also need to watch their health.

 

If you guys have any suggestions or recipes that you have tried and are not to bad, please pass them on.... I know others have issues they deal with, and they have inspired me when I have read about them, so I know you guys will help me.

Gretchen, right now you are in the adjustment stages. Your diet is strict and needs to be at least until you get your sugar within the acceptable range. Once you are "controlled" then you will be able to tell what spikes your levels and what doesn't.

When my husband was diagnosed the adjustment time was extremely hard for him. Once his sugar levels were controlled he could then treat himself to something every once in a while. He eats cake too! Not everyday though. Rob can eat starches and it doesn't bother him - he loves potato chips and popcorn. Sugar bothers him more than starches - which in turn, bothers me. Rob gets grouchy when his sugar is high. I've got a friend who is just the opposite - she tolerates sugars better than starches. Doesn't make sense to me but that's the way it works for them.
Thanks... I know it will happen soon. I just hope I can do it and loose a little weight along the way.

I must say, that everything that I bake my husband and I treat ourselves with a piece each. Then we give it away to our friends! When it came to the pumpkin bread that I made from the CWB group here on the site, I made it and I was able to get two large loaves and one tiny loaf. We went on a trip with several people this last week and they loved it! That is how I get rid of my baking food that I want to eat. I rather have someone else enjoy it and tell me. I get a greater satisfaction more than eating it myself. Perhaps you can try thinking that way for a bit until all of your sugar levels are in a good range. Your health is a lot more important than the little tasting of batter or cake or bread.
BTW, I lost a good amount of weight myself 2009 and I've been able to maintain and even lose more weight because I watch my food intake. Once you get started with a good blood level and a healthier weight for yourself, you will be able to eat anything. It is just waiting to get to that healthy starting point. Be patient and let others tell you just how delicious your bread, cakes and cookies taste! It works.

I'm glad somebody brought this subject up. I've been diagnosed as insulin resistant myself, having had Polycystic Ovary Syndrome (PCOS). Had a total hysterectomy but according to my doctor I still have the "Syndrome" part and am at higher risk for Type 2 diabetes.

People I know who are diabetic and way more disciplined than I'll ever be just say to me "Just make the cake but don't eat any." But dang it, that's hard! On the other hand, I observed my mom, a Type 1 diabetic from age 40 to her death at 81 gradually lose her eyesight, and other abilities, and 3 months before she died, most of one leg. So I want to take this business seriously enough.

I'm hoping that with exercise I'll reduce my weight and my risk, but my heart goes out to you sisters-in-cake-conundrums so know I'm praying and hoping the best for all of us.

BTW, I use Stevia, a natural sweetener in things like tea. I can't remember if you can cook with it. I think some things you can. I feel better about using it than Splenda or aspartame although I've had those now & then.

You can do it!

Use the measure-for-measure Splenda in the big yellow bags to replace all of part of the sugar in your baking. When brown sugar is called for, do NOT bother buying the Splenda/brown sugar mix because all that is, is Splenda mixed with brown sugar and you can do that yourself without paying through the nose for it! Also, when making buttercream for a cake that you're going to eat, you can use Splenda - just put it in the food processor and pulse a few times to make it a finer grain, then use it in place of all or part of the icing sugar. It can be a little bit grainy but tastes pretty good! I do this for my mom sometimes because she is diabetic. However, she usually just watches what she eats so that she knows that she can have a nice slice of cake - in fact, more often than not, she has 2 slices!

I am diabetic too and control it with diet only. Some times on special occasions I go ahead and have a treat.... you can not deny yourself all the time!
However, if you start to look at the sugar content in EVERYTHING you will be suprised... milk, bread, etc... I use Unsweetened Almond Milk.... I only purchse bread that has 2 grams or less of sugar and get the whole grain bread. I follow the Belly Fat Cure diet by Jorge Cruise. Love it... Easy to follow and it is pretty basic. No more than 15 grams of sugar a day. My HBa1C numbers have been 5.8 or lower for over a year now. Eat lots of fresh veggies... eat fruit but watch how much you eat. Following a very balanced diet is the key. I try to eat a snack between meals but my snack is carrots, or a string cheese stick or some nuts or fruit. Stay away from Juice... it is loaded with sugar. I agree with Deah... find what spikes you the most but if you stay balanced... you should not have to worry. If my sugar is high I have a very dry mouth at night. When it is even... I don't. Be sure to drink plenty of water... stay away from the diet sodas.. once I got away from that too my levels were lower. I do not use splenda... because of some research I did on it. I use either Truvia or Stevia and like both of them better anyway. I drink ice tea if I need a caffeine boost and I personally have found that coffee lowers my blood sugar so if I do eat something sweet... a cup of coffee some reason helps. Not sure what the combo is there! I had some cookies today and am feeling it tonight! I feel crappy when I have too much sugar. But my count is still only 125 tonight. So don't think you have to give everything up forever... but do take care of yourself... One more thing that makes a HUGE difference is exercise!!! Walking for 30 minutes a day even helps! Thanks you guys for everything. So far the doctor has told me to stay away from Carbs. I find things have allot of carbs that you would think I could eat. He only instructed me on carbs. 60 a day. So right now I have only ate meats, and veggie, hardly any fruit because that is full of carbs, eggs, cheese and so much lettuce, I feel like a rabbit. I go back tomorrow to the doctor so I hope to find out some more. I know this is hard, and I am doing it, I hope, but I am so hungry all the time, I can't figure out what to eat. I am going to pull out my bike this week. The weather is getting nicer and I think that will be something nice to start doing. By the late afternoon, I am just tired and when I get home I really don't want to do anything.... I hope tomorrow I can get some more answers about my conditions and maybe a little more help with my diet, because I am not sure how much longer I can go with out some of things I want. This weekend was my nieces birthday party and the cake looked so good, I wanted it so bad, but didn't do it!!!!!!!!

Good for you not having that cake! Yes, it is always very hard to change your eating habits for the first several weeks. You are on the right track, exercising will greatly help curb your appetite also! Please make sure you drink water. I hope that you and your doctor will be able to find the right eating diet for you and your doctor will most likely have you go to a nutritionist or you can go direction to the ADA site for a recommend Diabetic Diet that helps with the carbs. You should have had this information in your blood taking kit as well. I know it is all so new for you but take a break, sit down and read up on it.

I find that if I chew gum while I'm decorating I'm less likely to lick the spoons and beaters. Good luck!

I have 2 diets that keep blood sugar levels low... Jorge Cruises Belly Fat Cure is good and Tosca Reno's Eating Clean is amazing. There are more options with Eating Clean and I love how everything is so healthy for you. Our daughter follows the Eating Clean diet and she is amazingly healthy. Eating Clean you eat 6 smaller meals a day so you are never hungry! I do eat about 6 times a day and when I follow it I am not hungry and my blood sugar stays even all day.
And remember... if you follow a diet most of the time you can have a treat every now and then.
Jeri, I just saw something about the Eat Clean diet and I couldn't get into the website yesterday. I will try again. Thanks for all of ya'll encouragement. It has been hard, but I went to the doctor today and in one month I lost 9 pounds. I will get my blood work results tomorrow and he is very confident that that will look good too!
