Hi can any one help please.? I have been making Graduation cup cakes for a friend. But after awhile the fondant collapses. the white scrolls seem ok but not the blue hats. is it because i am using the gel coloring? I do live in a coastal city.

Hi Diana, I suggest you can add some gumpaste to your fondant. With all the humidity fondant tends to collapse, plus the humidity from the gel color.

Will see if i can get it thanks. I have Gum Tragen would that do the same thing? I live in South Africa Cape Town so not sure if i can get the paste will try in the morning. 11pm here and so off to bed.

Gum trag is what you need. Add a couple of pinches to your fondant. Knead in well. It will help your fondant hold up to the humidity. Not 100% fool proof of course. Depends on just how humid it is there in SA. But it will definitely help. You can add gum trag to your fondant which makes gumpaste. To approx 500 gms of fondant add approx 10 ml of gum trag. Knead in really well. That's it.... you now have gumpaste. Use this to make your hats & scrolls. Here where I live in Canada, it's approaching fall, that gumpaste will dry rock hard. Yours maybe slightly softer because of the humidity. Keep your gumpaste wrapped well, or it will dry out. If you have plastic wrap, cover the gumpaste tightly with it. Place in a plastic bag and in some kind of container with a tight fitting lid.

Thank you so much. I do the wrapping and sealing thing but had forgotten the Gum Trage. I did a cake decorating course just before i got married. Circumstances changed so I did not carry on. Then we went through the years of children's butter icing cakes. Now 33 years later I have found time and a new passion for sugar creations.

Same as I. Took a course when children were very young. Fast forward after there grown... Made my 1st fondant cake 7 yrs ago... back on the wagon again. Now retired, have more time to play around. :o)
