Cake Decorating Community - Cakes We Bake

So I've been out of commission since July 6 when I stepped into a hole in a friends yard and broke my ankle, not a normal break, a break requiring emergency surgery, helicopter flight, you name it. It is quite painful but laying in bed is killing me so I realized that I missed a friend's birthday and sent her a message asking what kind of cake she wanted. Pineapple upside-down cake, no problem, I found a new recipe I've been wanting to try. So, keep in mind that I am on crutches and cannot even put weight on my right foot. None. So I gather my ingredients, pre-heat the oven, everything, I even manage to get the cake in the oven with no assistance. (Now I am in A LOT of pain) I'm waiting for the cake to finish now, I can smell the deliciousness, so it is nearly done. Long story short, baking with one foot is not an easy task, but it kept my mind off the situation for a while and I'm sure she will love it tomorrow! (next time it will be a less labor intensive cake with ingredients that can be made separately.)

Bless Jackie.  Well done, but maybe not entirely the smartest move?  You can do yourself more damage and take longer to heal.  I understand the boredom, but do be careful.  Try only doing stuff that you can do sitting down.

Jackie the next time better wait till you are healed. So sorry to hear of your accident.  I think someone needs to get you some good reading material to keep you entertained and out of the kitchen.  Make sure you give your body time to heal. Best wishes for a speedy recovery.

Well, my friend did appreciate her cake, but I do think that was too much to be doing (I'm going crazy in a bed) but I did do everything I could sitting down last night. Still too much. I really want to try a cake with ganache, but that will have to wait until I can at least stand on both feet.

You were so kind Jackie.... But alas..... At your own expense. Please... Please Jackie.... Do take care of yourself. You may put your healing in serous jeopardy. If you can't decorate, why not do cake research... Read articles on the web,. Take notes.... Watch cake videos.... invest in some good erasing material as Goreti suggested. I was off for 3 months with a rare virus, very painful, swollen joints, burning, severe fatigue ..... couldn't do anything. Hubby, 2 kids, a house..... But I was SUPPOSE to rest. I cheated, cleaning, etc. , went back to work too early... Had a relapse. Off for many more weeks....So I know whereof I speak about taking care of yourself!!!! Hope you realize all remarks posted here Jackie are real true concern for a fellow caker..... :o)

June, I truly am thankful for everyone caring so much. I learned last night that I am not ready to bake yet, I hate it, I was hoping to experiment but after getting out a little today (much needed and stayed sitting). I've been watching tutorials and reading, coming up with new recipes to try when I am healed. I am, like you, wanting to do so much for myself and others, it is just my personality. It took my fiancé telling me (very sternly) that he loves me and cannot stand to see me hurting, he took over everything, dishes, laundry, even getting up to get my own water. Apparently I am doing no more work until after my next surgery... August 15th.

I really do appreciate everyone caring so much. Does anyone have any suggestions on youtube videos or favorite blogs?

I am very blessed Katy, he is wonderful. Thank you for sharing your subscriptions. I appreciate it a lot.

:o) :o). :o)
Well, I delivered the cake Sunday. I got a message in all caps that this was the "best pineapple upside-down cake she ever had and it was super moist... Even better than her mom's." I LOVE responses like that when I bake. But until I can actually stand I won't be baking, still in a lot of pain :'(

Very satisfying response Jackie, well done.  Now GET BETTER!
