I've been asked to make some muffins. Now, i've not actually made any before lol
I have a deep ish 12 tin ( deeper than what I make the cupcake in ) is this any good ?
Also In need of some good recipes for muffins, as I understand that these are a different mix thank cupcakes ? Also I need to make cookies too, again i've not made any before. Ive got some great pictures of these regarding decorating them, but nothing else.
So I thought I would ask for some of the brilliant advice on here ;-)

Cake pops are very pretty Lisa. I agree with you on the muffins - not quite there for a customer. I'm sure they'll be fine next time.
The secret to good muffins Lis is NOT to over mix. I never use my mix master, as muffins are strictly a bowl & wooden spoon type of deal. I have 2 fav banna muffin recipes. Will send my fav by message. :o)
Only muffins I have made so far are blueberry. One from a mix, one from scratch - both good!

Hi June, ive tried to send you a message but it wouldn't let me. I just wanted to say thank you for sending me the recipes. If I added chocolate chips to the basic mix, would I have to adjust the mix as im adding extra sugar?
I tried adding them to cupcakes once and had problems, I think , with too high sugar content. I also had problems with adding raspberries too.
I wouldn't know what to charge for them either, some places charge £2.10, others £1.10. I wasn't very happy with the pricing of the cake pops yesterday. Im not very good with that side of things. Lets just say they got a good deal lol.

Here, most muffins are sold in coffee shops. They range roughly from small $100= .64 sterling, medium $1.50=.96, large $2.00= 1.28. I have never sold muffins so that is a tough question. I have baked & given as gifts. But I would think for a dozen I wouldn't charge any less than $2 a piece or 1.28 sterling, so 15.36 sterling. As far as adding chocolate chips, you fold them in gently into your batter at the very end so they don't sink to the bottom of the muffin. When adding small fruit, roll them in a bit of flour, this coats them so they don't sink, Also fold them in your batter at the last minute. Your sugar content doesn't affect adding nuts, fruit etc.
As far as Cake Pops.... I found them a LOT of work to make. They would be pricey just because of the labour involved, and the price of the chocolate. I have never seen them in cake shops here.... cakes, cupcakes yes. Here cupcakes start from $1.75 -$3.00, so for cake pops I would think min of $2.50-3.00 each 1.92-2.22 sterling. This is just a guess on my part. What you have to do is find shops or decorators that sell them to get an idea off what they sell for in your area. I don't sell enough as I am a only a hobby baker, also, you can only charge for the area in which you live.
The difference between cupcakes and muffins is in the method. They also have less fat and sugar than cupcakes.
The muffin method -
1. Mix the dry ingredients together.
2. Mix the wet ingredients together.
3. Add the wet mixture to the dry mixture with a spoon or spatula
Notes: Stir lightly until just combined.
That's it ..
Cupcakes, on the other hand, are made using a variety of techniques
- Sugar batter method or creaming
- Streamlined Method or single-stage mixing
- Whisking Or Whipping Method -
- Flour-Shortening, Flour Batter Or Combination Method - currently called reverse creaming ..
- Sugar Water Method
Generally speaking. once you use those techniques, you are making cake not muffins.
An example of Plain Muffins
250g flour .... ½ ts salt .... 3 ts baking powder .... 2 tb sugar
1 egg, beaten ....240ml milk .... 60g melted butter
Muffin method. Fill holes ⅔ full. 375°F. 20 to 25 mins
Plain Cupcakes
240g butter .... 400g sugar .... 4 eggs .... 1 ½ ts vanilla
450g cake flour .... 3 ts baking powder .... ½ ts salt .... 240ml milk
Sift flour with baking powder and salt. Cream butter with sugar. Add eggs, one by one, then the vanilla. Add dry ingredients alternatively with milk. Fill cupcake holes ¾ full. 350ºF 20 to 25 mins.
