Hi everyone, ive just joined. Ive been looking for ages for a great cake site and ive finally found it !
Im kind of new to this, although i can make sugarpste flowers and shoes etc. I watched my nan for years but its only now that ive stated to do it for myself.
Please forgive me if ive posted this in the wrong place!
I made myself a birthday cake last week, for my birthday . I made a pair of black glittered high heel shoes , butterflies & flowers ( blossoms and carnations) all made fom sugarpaste.
And now ive been sked to do a 21st birthday cake ! Panic !!! What have i done ?! lol )
I have so many questions and im hoping to get some geat advice on here from you all and make some newfriends too.
Ive been asked to make a giant cupcake. With white chocolate butter icing. Could i use a white chocolate ganache instead ?
This is for the 25th nov so, hopfully enough time to get it right. I have seen the moulds for these, has anyone used one before ? Also, how much cake mix would i need ? And im terrified about piping it ! What size nozzel? Would i need a large piping bag ?

Now to your questions. I am not a professional and bake purely for pleasure, but I will answer what I can and I know you will get other answers from other members.
White chocolate ganache is not the same as butter icing and if they've asked for butter icing, then that is probably what they want, taste wise. It's easy to make, just make butter icing as you would do normally and add melted white chocolate to it. Re the mould - if you search on this site for Giant cupcake, you will see lots of cakes that people have made using the mold. I suspect the cake mold will come with directions as to how much mixture to use, many speciality tins do. If not, post a comment on Mandy's page, asking her how much to use.
Your nozzle will depend entirely on what type of pattern you want to make - large and loose, small and tight? You'll get some ideas from the other giant cupcakes on this site and you can ask the member what tip they used. Personally, I would use a large star nozzle and do something with that.
Hope this has helped some - there is nothing to be scared of, you will find it's not as hard as you think and you will enjoy doing it, I'm sure.

I did think that i may put pic of my birthday cake on but i dont know how to. I use photoucket but i think there is something wrong with the site.
I thought that the white chocolate butter cream would be a problem with piping ? The chocolate setting hard and the piping bag exploding on me ! LOL Someone then suggested using ganache instead. I hope i posted in the right place. Finding my way round the site is a little confusing at the moment !
Ive only pipe on normal sized cupcakes, and not very well to be honest so a huge one !!! lol

Butter icing won't be a problem with piping Lisa, it won't go hard. Make sure it's at room temperature and give it a good beating before you try to use it. It works just the same as any other butter icing. Try practising with a large nozzle on some greaseproof paper before attacking the cupcake if you're nervous. Bet you find it really easy....
Posting a pic - Click on My Page from the home page to go to your page. Just under Welcome!, you will see a series of links, one of which is Cake Photos, click on that. You will then get a box open where you can choose the location of your picture file to add. When you've done that, click on Add Photos. From there you can edit details, add a title, description etc. We do like members to give titles to their photos and a description is nice too. The reason for the title is so that, if someone wants to search for something particular (like Giant Cupcake for example!) they stand more chance of finding what they're after.

I will try and get my picture of my cake on although the pics arnt that good. I dont have a large nozzel,something else im going to have to buy for doing the cake.
Would i need a large piping bag too?
Ive got 5 nozzels and a normal bag at the min.
Also i dont know how much to charge. I was going to do some normal sized cupcakes to match the main cupcake. The girl wants sugarpaste flowers and butterflies. These, for me are the easy bit lol

Now costing I can't help you with as I hardly ever charge. Try researching on the internet for professional bakers doing novelty cakes and see what they charge. I know my US friends tend to charge by the portion..... If you're going to do extra cupcakes and sugarpaste decorations, then they're getting quite a bit and you need to charge accordingly. Try posting a discussion with these questions - Mandy Donaldson may well be able to help you. She's another Brit and does loads of cupcakes with fondant toppers.

Lisa, just keep telling yourself "I can do this". If something goes wrong, don't panic. Just take a step back and come up with a plan to either correct or redesign. Many of my cakes have not turned out as I had originally planned. Over time I have gotten better at hiding the problem spots. The funny thing is that in the end I'm the only one who notices it. The recipient seems to be so happy and doesn't notice anything.

I thought i might do a couple of attempts first, i have time. Im always picking fault in what i do!! I wasnt compleatly happy with my cake i made ! It could of been better ! I lost sleep over my cake and that was just for me ! lol

I've been baking since my teens (many many moons ago) but only started decorating last year after my daughter got me a certificate for the Wilton class at the local Michael's store for mother's day. It taught me the basics and since then I have been looking for tutorials on everything & videos. I've learned a lot that way. The friendship & information on this site has really helped me along. Also get books from the library. They know me there already. As soon as I walk in, they go get the books I have on hold from other libraries. I like to challenge myself. Although, sometimes I really do think I'm nuts when I'm struggling with a cake. It does feel good when you pull it off in the end even if it's not exactly what you had planned.
Wow! I used to watch my nan when i was young but i didnt have a birthday cake last year and my grandad bought me a cupcake book a few weeks ago and that was it , i thought, i know i'll make my own birthday cake!
I would love to do a course but i cant afford it. Ive bought most of the kit though.
Im a nail tech by trade, and for me everything has to be just perfect !
I drive my family and friends mad with it..mum will say ' no one will notice that! ' and they wouldnt.. but i will ! Ive watched loads of tutorials and learnt how to make the shoes and flowers etc

Now, when my aunt visits every 2 weeks, i have to make her a couple of batches of cupcakes !!
