I will be posting the fondant recipe on my blog next week. Can you wait? If not send me your email id and I'll send it to you. I have a post on ganache with two recipes included on my blog too. If possible read it it might help you understand better. Chocolate Chips usually will effect the taste of the ganache not the texture. Its the amount of Chocolate that you use in your ganache that makes a difference. I have explained more on my blog. Also, I live in Florida where it's hot and humid as well and I've made ganache twice but used the fridge to set it instead of leaving it out overnight and it melted at room temperature within a couple of hours. Do you know if that's because it ganache didn't set right or because I used Tollhouse chocolate chips? Thanks for any help you can provide. Love the video!

Thanks for posting! Do you mind sending me the recipe you use for fondant? Does the cream make the fondant more elastic?
