Buy a cake torter/cutter. They are worth the investment, especially with big cakes. I put a thick layer of butter cream around the edges of my cakes and then spread the filling so there's a frosting dam keeping the filling from leaking. I frosted that cake with white butter cream and then sprayed it with purple spray. I'd never tried it and I really liked it too! those cans spray a lot. I bought 2 but didn't even use half of one.
There's lots of flavors, Bavarian crème being my favorite. You can get them at Cash & Carry or find a donut shop and ask them if they will sell you a pint. It only takes about a 3 cups to fill a 1/4 sheet cake.
I use donut filling! It's fabulous, and also aseptic so no need for refridgeration. It comes in long bags. There's about 1.5qts per tube and they run $3.-$5.00ea.
