Thanks, Susan! Though my recipe is gluten-free, dairy-free, and egg-free, it's not sugar-free. It has a cup and a half of sugar in it. It's a secret for now, as my son is working on a cookbook. There is a recipe book called Baby Cakes by Erin McKenna, available at Amazon.com that uses honey and agave nectar instead of sugar. Some of the recipes call for spelt flour which has gluten in it, however, there is a vanilla cupcake recipe in it that is gluten-free.

Is there any chance you could share the recipe with me. I love to make cakes for my daughters drill team but there is one girl that cant eat them because of the gluren and sugar. I would really appreciate it. I always get her some cookies but its not the same. Thanks. Great job on the cupcakes!

My son, Jordan (17 yrs. old) and I made these cupcakes to take to the last day of his homeschool bowling league. They were a hit with the kids! They are also gluten-free, dairy-free, and egg-free. Jordan got the idea for them from a book from the library, Hello Cupcake.
