It's soooo dead easy Katy. The chocolate I used was about 6 mnths old. Took out of freezer. I did have to knead quite a bit to bring back elasticity. And the ends were a little dryer than I would have liked...but added just a smidge of shortening...and it was reconstituted. All it is, is decent chocolates melted with corn syrup. You mix up, knead it, pop in the fridge....your done. I actually used chocolate chips...worked fine. Know better the chocolate, better the outcome. :o)

I've been wondering about going down the modelling chocolate route myself June.  I have heard so many people that do really great stuff with it say how easy it is to work with.

You know Katy...as I said below...modelling chocolate is so easy to work with. Freshly made..it's so so pliable. Think I'm gonna try a 50/50 of modelling chocolate & gumpaste next time I make a large flower....
