OK Bonnie - here we go with a syrup pudding recipe.  Sorry, it is in Brit speak, so you may have to convert?

3 tablespoons (45ml) or thereabouts of golden syrup.  Tip - dip your spoon into icing sugar before measuring out the syrup, it will come off easier or heat your spoon under hot water first.

60oz (175g) self raising flour

half teaspoon baking powder

6oz (175g) soft margarine or butter

6oz (175g) caster sugar

3 medium eggs

Grease the base and sides of a 2 pint pudding basin.  spoon the syrup into the base.  Sift flour and baking powder into a bowl.  Add the margarine (or butter), sugar, and eggs and beat well. Pour the batter into the pudding basin on top of the golden syrup and level the surface.  Cover (see following link to how to cover a pudding basin and steaming process) and steam for 1hr to 1hr 15mins until surface feels firm to the touch.  Turn out onto a plate or serving dish and pour extra syrup over if required (I recommend you do this!).  Serve with custard or pouring cream.

Flavour variations - 

Jam - Substitute 3 tbsps of your favourite jam for the syrup

Orange - Substitute orange marmalade or curd for the syrup.  Add grated rind of 1 orange to the sponge mixture.

Lemon - Substitute lemon curd for the syrup.  Add grated rind of 1 lemon to the sponge mixture

Chocolate - Substitute 4 tbsp (50ml) chocolate spread for the syrup.  Subsitute 1oz of the flour with 1oz of cocoa.

I'll get one to you Bonnie, don't worry.  It's really basically a Victoria Sponge recipe in a pudding basin, but steamed in a saucepan.  I'm going to check my Mum's old recipe book, see if hers is in there.  Leave it with me.

Katy. do you, or anyone, have a recipe for the 'sponge steamed pudding', like the syrup or jam that you mentioned?  Or do I just hunt for it on the internet?

exactly Becky!  It's a never ending spiral of bulges.  I have to say to myself STOP you are making it worse!

I always have issues with the top edge bulging just a little. When I smooth it it just bulges the other direction. :(

OMG Katy... My mouth is watering! ! Mom made all 3 you mentioned. Especially the pudding with golden syrup. Thats the one I remember most! Yum...
