For Spun Sugar you need a few things before you get started.

1. Heavy saucepan
2. Large Bowl with ice cubes and cold water for the ice bath
3. Newspaper for your floor !
4. I used 2 pans with the handles hanging off my counter and over the newspapers on the floor. Spray the handles with cooking spray to keep the sugar from sticking.
5. 2 forks


Ingredidents

1 cup of granulated sugar
1/4 cup corn syrup
1/4 cup water
This recipe is easy doubled
Put all everythng into the saucepan on meduim/ high heat
Swirl pan to disolve sugar , once sugar is disolved bring to a boil cover and biol for 2 minuted remove cover and heat sugar to 310 degrees this takes a while but once it gets going it raises to 310 rather quickly .

Once it hits 310 degrees remove from heat and blunge into ice bath to stop the cooking process.
Let it cool or a minute or two into a syrup using your fork lift the sugar above the pan when threads starts to drip off the fork it is ready. Use the clean fork to tip into the mixture hold it about 5 or 6inchs higher then the handles and go back and forth you will see threads of suagr forming and spin it around the handles or just back and foth it takes a little practice once you have used your mixutre or it gets too thick you can reheat it id you need more . Then I just gathered up the threads.

You can also do this over a metal or heat resistant pan to make a "sugar bowl and/or dome. Just make sue you lightly spray the bowl with cooking spray so the sugar does not stick.

this is very fragile so handle gently.
