Katy, I am sure Betty Crocker would work just fine.  I use them, too, whatever is on sale for $1.00.  I think Betty Crocker even comes with pudding already in it.  Or, you could use a plain old yellow cake recipe and add the lemon zest and pure lemon extract instead of vanilla.  You could also add the Jello Lemon Instant Pudding, as well.  It does make a cake really moist.

Interesting glaze, might borrow that one!  Duncan Hines is a bit of no no for me here.  So expensive as you have to buy off Amazon or an import company.  Which is a real shame because there are so many flavours available, which we just can't get here from other manufacturers.  The biggest range we have is Betty Crocker, which are really good, but again, limited flavours.

Thank you, Katy, Goreti and Inoka!  Katy, I used a Duncan Hines Lemon Supreme cake mix made as a pound cake (recipe on the side of the box) using four eggs, a box of Jello Lemon Pudding, 1/3 cup oil and 1 cup of water.  I substituted 1/4 cup of the water for lemon juice and used the zest from one very large lemon in the batter.  While the cake was hot, I drizzled with a glaze made from 1/4 cup melted butter, 1/4 cup lemon juice and 1 cup powdered sugar and let it soak in.  It was super moist.
