Thank you very much! Our carrot cake is LOADED with raisins, coconut, toasted walnuts and, of course carrots. We make a Cream Cheese IMBC that is a bit lighter than the typical Cream Cheese frosting. It tastes incredible, but this 10" cake was STILL SO HEAVY!

Thanks so much! I struggled so much trying to create a crusting cream cheese frosting that wouldn't melt fondant pieces. I ended up with a modified version (I really didn't care for the flavor(s) of any of the true crusting cream cheese recipe I found- but adding more cream cheese "upped" the 'melting' factor, uugghhh) and settled for decorating with IMBC flowers with some fondant pieces placed on top of that.
