Cake Decorating Community - Cakes We Bake

I had planned on taking my time to practice buttercream flowers. Unfortunately it did not work out that way. I had to rush thru it and this is the result. It is coconut cake/coconut custard filling & pineapple, frosted with coconut rum cooked frosting. This is his favorite combination.

I actually used the recipe from this site http://leelabeanbakes.com/blog/frosting-filling/even-better-cooked-... with the following modifications:  First I made 1.5 of the recipe, used canned coconut milk and instead of vanilla I used coconut rum.  It had a very subtle coconut flavor will was very nice with the rest of the cake.  I filled the cake with http://designmeacake.com/pineapple_cake_filling.html and http://www.countrycleaver.com/2012/02/coconut-curd.html.  To the curd, I did add some cornstarch not sure how much.  This way I didn't use a dam.  For the cake I used this recipe http://eatineatout.ca/pina-colada-cake/ but I did not use the coconut extract because I don't like the artificial flavor of the one I have at home.  It was very tasty but I think he actually like the one from last year better.  Last year I actually made fresh pineapple rum jam and used it in the filling as well as toasted coconut.

you are so right, June. NO, it ain't easy!  I can make gum paste birds all day long but I couldn't pipe a decent border if my life depended upon it!  Betty is the Queen!  Queen Piper!

yes , I need to practice ! but I was never good at piping flowers , only the tooth pick flowers I can do ?!

your so right Gail..... Betty makes it look easy....but it's soooo not. Piping in bc....be it borders, swags, and especially flowers is a real art. Steady hand and lots and lots of practice needed. When you don't work with bc on a regular basis...it's like re-learning all over again when you pick up that piping bag!!

very pretty. nice job on piping the flowers. we are all trying to do flowers like Betty. I wont post mine lol !
