I would love to take credit, Katy, but I saw a mini tutorial some time ago on how to do bamboo.  I have no idea the author of the post, but I thought it totally brilliant and it is so easy.

Thanks, Katy!  I think I have fallen in love with RCTs and modeling chocolate - lol.  To make the bamboo, roll out logs of gum paste and cut the log in two or three pieces.  Apply glue (or water) to the cut ends and firmly push back together.  Press hard enough that a slight bulge forms at the union.  Let dry overnight and color with petal dust or gel colors.  Hope that makes sense.
