Cake Decorating Community - Cakes We Bake

I made this cake especially for Betty's birthday today. She is an active contributor of Cakes We Bake New York and she's from Southern Pines, NC, United States. To honor her, each of us from different countries, agreed to make her a cake using the piping skills we've learned from her. I really adore her good piping skills and all the beautiful cakes she created. I've tried doing it for the first time. This is a chiffon cake with whipped cream icing. On behalf of my family and the Philippines we wish you good health, happiness and an enjoyable birthday. God bless always. More birthdays to come.... more cakes to decorate!!!

Now, you see why I say you have taught us so much!  I would have never thought about letting the butter cream flowers air dry for a while before adding to the cake.  I did with RI but not butter cream.  Guess that is why some of them got squished.  AND, using water instead of milk!  Well, duh, never thought of that either.  Two great tips!  THANKS!

Maria, Have you tried making them out of butter cream and letting them air dry. That's what I do, then you can gently lift them up & place where you want them. If you use water in your BC icing instead of milk they will last a long time.

Did you try lifting your roses off the nail with a pair of slightly opened scissors, Maria?  I saw it on a U-Tube video.  Lift the rose with sightly opened scissors, transfer to cake and position.  Close scissors and slide out from under rose.  On the video, Chef Tetreault said transferring the rose was the easy part.  I am like you....I thought it was the hardest!

I just found the technique to pipe it after I did several roses. The most difficult is transferring it on the cake.

It IS difficult!  I practiced many, many hours to be able to do a good enough rose to use on the cake.  Yours look as though you could do them in your sleep.
