Hi Patricia!!    I found both the cookie and icing recipe from an AMAZING cookie decorator Sweetsugarbelle!   The cookie recipe uses confectioners sugar so they come out like a shortbread and they taste soooo good even without icing!!  You don't have to freeze the dough right before baking the cookies like some other recipes they hold their shape perfectly!   

 

Yes the cookies can be stacked once the icing is dry, I usually let mine dry over night after I have finished all decorations just to be sure.

ONE NOTE: I only used 1 1/2 tsp of baking powder instead of 2 and and I used 2 3/4 cups of flour. Also, with mt oven I only had to bake the cookies at 375 for 5min, but it's different from oven to oven!!
