Hummingbird Cake with Coconut Frosting
This was made for a 4th of July picnic and the slices collapsed from the heat, ruining the appearance, but it didn't hurt the taste at all. Hummingbird Cake is an old Southern Living recipe, much loved throughout the south, which features bananas, pineapple and pecans.
