I finished my royal icing course and this was my final piece! - \i did put a couple more flowers and an engagement ring in the centre of the cake, but those pics came out a bit dark

HI Tanya, haha .... yeah I really am now, when I first started I was really scared of using royal icing, but a bit of practice and you get good results. I'm gonna try and talk everyone into having a royal iced rose on their cake! and that's not just to get rid of the masses of roses I still have that didn't quite make it onto this cake :-)

I did my advanced pastry 29 years ago so looking at your runout brings back memories, and I didn't like doing piped roses but yours look lovely. I'll look at the PME website. I've just done a 2 day course at Slattery's in Manchester it was brilliant, making little people, if your on facebook my business page is "bake me a cake" then look out for polarbear in the prifile pic

I did the Royal icing PME diploma near London it is a five week intensive course on saturdays and they show you techniques thoughout the weeks and then you make a final cake base on their theme. - If you want more info about it just let me know :-) or visit the PME knightsbridge website.
