A friend really enjoys eclairs and so I made some, with a different spin. These are eclair 'cupcakes'! :o) The cupcakes are pate a choux, baked in standard cupcake liners. Then I filled them with homemade vanilla bean pastry cream and dipped them in a chocolate glaze. I finished them off with a drizzle of white chocolate on top. Next time I'll make these as mini cupcakes because these were massive and they'd easily feed two (or one, if it's my husband ;o)).
