I use gum paste for any figures & flowers. Either 50/50 fondant & tylose/cmc powder, or my homemade gum paste. Dries nice & hard. Modelling chocolate for taste for sure.

When do you choose to use the modeling chocolate over fondant? Is it for a different look? Taste? I have never used gum paste either and want to try it too. I can't figure out if it's just a preference thing or what. Guess I just not need to try them. I do have issues with getting the fondant to dry.

Depends. I have made flowers... easy.. and great to work with. But does melt quickly in your hands. But a have a few friends on here that use it for all kinds of sculpting. They swear by it. :o)

Marshmallow fondant. I have never used modeling chocolate. Is it easier to use than fondant?
