My 1st attempt on a rich fruit cake. I didn't use a recipe just made up the mixture for a sponge & added LOTS of mixed fruit & walnuts. I left for a week, then covered in marzipan to set then iced with white royal icing a few days later. I much prefer to work with fruit cake, it is sooo much easier to ice and decorate. This had to travel 300 miles so was a little creased on arrival
