Thanks Sandra.... Maybe a little of both :)) but mostly the icing consistency and the angle you hold the icing bag.

Perfect "Betty" cake!  OK, I have to ask....how do you get the petals to stand up like that?  Is it the consistency of your icing or just knowing what you are doing - or both?  They are butter cream, aren't they?
