Betty, I could eat half of this cake right now! Beautiful. I use the metal dry wall paddle (whatever you call it???) for smoothing my cakes, too, but I never get them as smooth as yours. I am about to come to the conclusion that I make my frosting too stiff.
I think my problem (or part of it) may be that I just don't make enough buttercream to be really generous with it. Trying to cure myself of that. Also I bought a metal side scraper - the one I have is plastic and I think metal may give a better finish, especially as you can do the hot water dip thing.
Thanks ladies...Katy.. I found a tool that they use for spreading caulking on wall, or sheet rock. It's wide, about the height of the cake. Ice heavy and swipe around.
