Simnel fruit cake recipe - moist and rich baked with a layer of marzipan in the middle. Covered in marzipan and then 3 coats of royal icing. Still couldn't get the sides smooth, so ended up using a pattern side scraper for the sides. I was happy with the smooth top though. Blue booties in 50/50, silver cross, fondant tiny Holy Bible and 50/50 open bible. Piped cornelli lace and ruffle decoration in white royal (very hard, as requested by the Mum!).

Thanks Becky.  Use it under fondant instead of a butter cream coating.  Spread a thin layer of apricot glaze over your cake, so the marzipan will stick to it and then cover the cake exactly the same way as you would do with fondant.  I make my apricot glaze by warming up a couple of tablespoons of apricot jam and then pushing it through a sieve to remove the lumps.  You can also buy it ready made, but it's probably more expensive that way.  You can also make decorations from marzipan - fruits flowers etc and can colour it exactly the same way as you would fondant.  I rarely use it on a cake as 2 of my grandchildren have nut allergies, but when it's a cake outside the family, I'm so pleased as I love the stuff!

Pretty! I have never used Marzipan. When would you use it over fondant?

Thank you so much Gail.  The top was easier to get smooth than the sides.  It took 3 layers of royal to do it and I used a trick I remember my Mum always did on Wedding cakes - very fine sandpaper.  Smooth off the rough edges before your next coat and make sure your smoother (a ruler in my case), is big enough to go across in one swoop.  The ruffles down the sides are done with a leaf tip and they cover the not so precise edges lol!

; ) I love the piping , you did , I know how hard we are trying to get it and looks like you got it , , so clean and neat , truly an beautiful work of art , so very smooth , wow perfect !   I keep looking at it , how perfect you did it , I don't know if I could get it so perfect !I have never made a Simnel fruit cake , or used marzipan for a filling , !I love fruit cake , sounds yummy !

Ah Adrian and Betty, thank you so much.  My god daughter (the Mum of the Baptism boy), had said - 'all I know is I would like blue booties, other than that I have no imagination at all, so I leave it all up to you'.  I liked it, but thought it might have been a bit too fussy, so was nervous.  She burst into tears and said that it was more than she could possibly have hoped for.  Made my day, I can tell you!
