Thanks so much for the feedback Bernadette! I guess the trick is take time and don't rush it? I've never decorated a frozen cake before but I think I may give it a try. sharp corners really just finish it off so nicely!

Hi Carlette,

To get thiose sharp cormers, I first apply a crumb coat and smmoth the corners using my offset cake spatula. I then put the cake in the freezer for a couple of hours. I then apply another coat of buttercream over frozen cake, smoothing out the corners. It just a lot of smoothing but working with a frozen crumb coated cake helps. I have dome sharp corners with out freezing the ake, it just takes more time.

I love using ganache as a filling and to frost a cake. I always cover the cake with cooled ganache to fill in so I have a smooth surface to coat.  When I pour the warm ganach over the cake it gives it a clean finish...no holes and nice edges to round cakes and sharp corners on square ones.

How do you achieve such sharp corners? do you make use of chocolate ganache?
