Was asked to bake a cake comemmorating the Houston Symphony Chorus' 1,000th concert in 61 yrs. of performing classical works.

It's an 8 layer Red Velvet with creme cheese icing..

Covered with 100 filled cream puffs with Bavarian cream...

Decorated with 12 Poinsettias made out of Sugar Paste...first time making those flowers.

I got great reviews and the Pres. asked to put it on HSC website....it was fun.  Took me about

4 batches of Pate e choux to get the cream puffs right....now I know how.
