color and extract is good, but it hurts the tongue in the end for those who dare to eat the fondant. piping gel closes the pores of the fondant and makes the colors look dull. i simply put a bit food coloring (any is just right) on a plate and use water. depending on how strong or light the color should be i dose the water on the brush. i like to use fine brushes with marten hair, they usually dont lose hair and make finer lines.
