Maria, this is a beautiful cake.  Love the chocolate one, too.  I've never tried the "combed" texture, either, but will give it a try.

It's the same as this triangle comb. I only found that Icing comb in the box of the tools I inherited from my former employer who was a Cake Artist. At first I didn't know what it is for...

Here's what the comb looks like. Just comb the icing upwards to create that effect.

It is so pretty, and very feminine.  There is that textured side again!  I really like that effect.
