Linda, this is a tip I learned working for Cookies by Design.  We would always roll our icing the day before for the next day, that way we didn't have to mess with filling bags when we came in the next day and when we ran out all we had to do was replace the cartridge.  As for your question...  I just knead the bag a little after the icing has defrosted...I have never had to re-whip the icing.  I suppose it depends on your icing recipe.  I use AmeriColor gel colors and I have found that some colors do darken over time.  Also icing that has been frozen tends to be a little thinner after it defrosts.  You kind of have to see what works best for  you.

Kathy! I just found this 'tip' with the icing and I LOVE it! I can't wait to try it out. My biggest peeve is cleaning up all of those horrible messy bags afterwards. How clever! My question: Once you freeze the butter cream that is not used, do you have to re-whip it up, and if not, does the color become darker? Thank you for this great tip!

Yes it does work with a glaze.  The last Christmas cookies I made I flooded the cookies with a thin royal icing.  Just have to make sure you stand your bags up so the tip is pointing up when you are not using them or the icing will run out of the bag. :)

Tanisha, this is how we made our bags when I worked for Cookies by Design.  We would roll all the colors we would need for the next day the night before so we were ready to go in the morning.  I can't imagine doing it any other way.  I even roll the icing I will use with my icer tip.

 

Anne, I have to say I have never re-beaten my icing after it's come out of the freezer when they are in rolls.

Thanks for this tip, I tried it out last night and it was great.  I gues the unused frozen icing will have to be beaten after thawing.
