wanted to comment on your post 'most moist cake baking tip' I have been doing this for over twenty years and my cakes have always been so moist that people rave about them. when I tell people my "secret" they can't believe it. So many cake decorators will say to never freeze your cake because it dries them out but that is only true if you let it cool then freeze. I started doing it that way, right from the oven to the freezer just to make it cool faster and I liked frosting when it was frozen. I found I got so many compliments that I figured I'd just kept doing it....glad to know another professional does it too!!!
