Brandy, First of all I would suggest that you not start at night, but early in the day.  Cakes stay fresh 5-7 days.  I usually start 3 days ahead of a due date.  If making decorations from fondant/gumpaste, I start 5-7 days early to make those.  The buttercream gets made 3 days before.  I bake the cakes 2 days before, crumb coat and let them set in refrigerator overnight.  The next morning I frost, put in the fridge for about an hour to crust, then I take out, smooth the frosting, and decorate.  Then I let them set in the fridge again overnight to set well before customers are transporting.  Hope this helps you time schedule and lets you get your sleep. :D

I was wondering if anyone was going to be attending the ICES convention in Reno this year?
