Cake Decorating Community - Cakes We Bake

A customer called today to request a sweet sixteen birthday cake for her daughter for October 16th. She said that she wanted a 9x11 (rectangular in size) sponge cake covered in fondant - checkered cake pink and black. Now if she goes ahead with the order, this will be my first order and I am not too sure as to how to proceed.
I am not sure what a 9x11 rectangular cake pan (an idea of the size of the pan will be greatly appreciated) looks like and how much to charge. Is it 9 inches wide by 11 inches long vice versa?
Also, how do I proceed with this order should I work out the final/app cost send same to her and request a 50% deposit (to purchase ingredients etc) and the balance due upon receipt of cake. Would a proforma invoice work etc.

Hi Kerry,

I haven't heard of a 9x11, but I know about 9x13 (quarter sheet) pan. That one you can find anywhere, so I would just use that size. Definitely you want to work out the price and provide the client with a price and invoice/receipt. For the pricing, it is hard to say...it really just depends on the cost of ingredients in your area, and the complexity of the cake, whether the cake will be a single layer or two layers with fillings etc. If you look under my custom cakes photo album, you should see a few quarter sheet cakes, which should give you an idea of the size of the cake etc. I hope that helps!
