just a lil venting..this caribbean rain obviously hates icing, i tried to ice a cake when it was raining outside and OMG everything droops and droops and droops...all my medium consistency icing by the time i'm ready for it is soft icing at best! so while the heat is our major concern the rain seems to be our enemy tooo! does anyone agree
What's your recipe like? It might be there isn't enough fats in your recipe for it to hold up to the heat...It can get really muggy here in Cayman after the rain, but I haven't really had this problem with the current buttercream recipe I use. I used to use an English style of buttercreeam that was just butter, vanilla and icing sugar. DELICIOUS but that one was really susceptible to melting in the heat and after rain etc. I now use something that is close to the wilton buttercream - part butter, part shortening, vanilla, almond flavour and icing sugar. (If I know that the cake is going to be outside in the heat, then I only add enough butter to balance the flavour, and use mostly shortening.) I just keep adding the sugar until it won't take any more, and then thin out with a little touch of milk or flavouring until it gets to the medium consistency I like. I hope that will help!
