I have a QUESTION: I made gumpaste flowers. Since in our area, there was a one week on and off raining, my gumpaste flowers wilted and moisture set in. HOW CAN I PREVENT THIS MISHAPS? Any suggestions and help... thank you.

Here in the Uk we get a lot of rain and I have never really had this problem there are a couple of possible solutions : storage make sure that the box you store the flowers in will keep them dry but not airtight as that will cause them to wilt, keep them away from any additional moisture such as a steamy kitchen. You may have to try a different paste to make your flowers with , if you used a commercial paste it may not be made with enough gum trag or cmc to with stand moisture in the air. I have a good recipe for flower paste which contains egg white, white fat and gelatine which I use all the time and if it sounds as if its different to the paste you use I will happily share it. First time I used Satin Ice. Anyway, can you share with me your recipe for sugarpaste and I would be happy to make it and try.  Thank you. 

1pound sieved icing sugar,1 fresh egg white (string removed),^x 5ml teaspoons of CMC (sometimes called Tylose) OR 3x5ml teaspoons Gum Tragacanth, 2x5ml teaspoons liquid glucose (corn syrup),2x5ml teaspoons powdered gelatine,2x 5mls white vegetable fat,5x 5ml teaspoons warm water.

Sprinkle CMC or Gum Trag onto icing sugar

In small bowl sprinkle gelatine on to warm water and heat gently till dissolved.

add white fat and and glucose to geletine mixture and heat till clear.Add gelatine mixture and egg white to icing sugar and beat together till snow white This takes a long time by hand, easier to use electrical mixer with dough hooks . This is a very stiff mixture. When complete wrap in plastic and store in the fridge.

This is a standard recipe for flower paste I got it from Tombi Peck in the 1980's who in her turn I believe got it from Denise Fryer a well known South Sfrican cake decorator at the time. good Luck Margaret

Sorry it should say 6x 5 ml teaspoons of CMC!
