Cake Decorating Community - Cakes We Bake

I have been making and delivering cakes for over 10 years.  I have finally had my first mishap that I was able to salvage before leaving my bakery and still saved the day... but it was a close one!  How do those of you who make and deliver multi-tiered cakes deliver them?  Totally assembled or do you stack them on-site?  Have any of you heard of the 'cake safe'?  They are pricey, but after last weekend, the $400+ for it doesn't seem so far fetched..... thanks for the responses...

I delivery totally assembled...I used skewers in each layer to secure it to the one beneath it and then one center dowel through the whole cake.

Thanks for the feedback. I do it the same way.

I deliver assembled because my brother has designed a support system that has a threaded steal rod that I stack the cakes on, it has a removable top eyelet that I anchor to the ceiling of my suv....he makes and sells these for my cake friends for MUCH cheaper than the cake safe....its also perfect for those really cool 3D cakes

I use SPS.  Have not had a mishap personally.  Stress Free supports are also excellent, but not disposable like SPS. 

I'd be interested to see your brother's system, Jenn, if you don't mind sharing info...

I do as the other ladies said and dowel each layer but when I put in my stableizing dowel I go all the way from the top and go threw the actual drum under the bottom layer until I feel/hear it hit the table and I know it is all the way threw.  I learned that from Sharon Zambido and it has saved me more than once..Thank you Sharon :)

I stack them on site.  I too almost had a close call one day and from then decided to play it safe.  

My brother will be making and selling them but he is a trumpet manufacturer and this is a crazy busy time of year for him so we are planning on spring for our sales to start :0)
