Cake Decorating Community - Cakes We Bake

002.JPGSince I made this  sheep cupcakes a week ago, someone called me to do a wedding cake.  I have done a wedding cake before, but my confidence is down, plus I need a good wedding cake recipe and how to price.  Help me.  How do I get over the fear.  I don't want to mess up.

Hi Jean! There are a lot of designs for wedding cakes in Google. Ask your client what design and cake they want then search for the recipes and free tutorials in Google. Watch also some tutorials in Youtube. It will help a lot. That's how I started. I only know basic baking before. Now I accept any designs as long as I have the picture, because I've learned so much watching tutorials online. If you still need help ask me again and I'll try to help you. Thanks Maria,  I am just so nervous.  I did a wedding cake a while back and it was too heavy.  Some liked it some didn't. I just don't trust my safe.  I think I will practice on the flavors and texture of the cake.  I think that is more of my concern  and not so much of the designs.

Are you looking for scratch cakes or doctored mix?

Jean, you need to ask your bride what kind of cake she wants, and if it's more than one tier, does she want different flavours for each tier?  If you need a cake that has a firm texture but is still moist, there is a lady in the UK who has some wonderful recipes and tutorials on her website for many different flavour of Madeira cake.  Her prices for her pdf tutorials are really cheap and she gives step by step instructions how to achieve the same results as her.  She is a brilliant cake maker and has followers from all over the world.  Her name is Janet from Quaint Cakes - here is a link to her website -
