3 egg whites
1-1/2 c. sugar
1 c. unsweetened applesauce
1 tsp. vanilla
2 c. all-purpose flour
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 c. sliced, cored and peeled tart apples
Preheat oven to 350F. Beat egg whites until slightly foamy; add sugar, applesauce and vanilla. Combine flour, cinnamon,
baking soda and salt in separate bowl; add to applesauce
mixture. Spread apples in 13 x 9 inch pan or another
large round or shaped cake pan sprayed with nonstick

Spread batter over apples. Bake 30 to 35 minutes or until a toothpick inserted into center comes out clean; cool
on wire rack. Cut and serve with ice cream or whipped
cream; I have decorated it for Valentine's Day.
